To use, add 2.5kg of dry Genoese mix to a mixing bowl fitted with a beater. Add 1kg of water and 250g vegetable oil while mixing on slow speed. Scrape down batter. Beat for 4 minutes on medium speed. Add 450g water while mixing on slow speed. Scrape down batter. Mix for 2 minutes on slow speed. Bake at 190 degrees.
