Bread flour is a high-protein flour that typically contains between 12 and 14% protein and is designed for baking yeasted breads. The high protein content means that bread flour has more gluten in it, which makes the dough more elastic and light and results in a chewy and airy texture when baked. Big issues with clumping in the last batch i purchased. Plus the flour contains shards of extremely compacted dried flour throughout the dough which are impossible to work out on machine or by hand. Waste of money. Maybe just a bad batch but I wont be risking buying it again.

I've been using this flour for several years now and have been very pleased with it's consistent results. It;s easy to handle, has a nice texture and mixes well with other flours, notably the strong wholemeal flour I usually buy at the same time.
