Mississippi Chocolate Muffin & Cake Mix is a versatile mix which requires only the addition of water and vegetable oil to produce deliciously indulgent cakes, muffins, loaf cakes and puddings. The mix produces a bake with a closely packed yet moist crumb and rich chocolate flavour. Both the batter and finished cakes are freeze/thaw stable.
Place 1kg of Mississippi Chocolate Muffin & Cake Mix into a mixing bowl fitted with a paddle. Add 425g of water and 235g of vegetable oil then mix on slow speed for 1 minute, scrape down and then mix for a further 6 minutes on medium speed. Scrape down again, add any inclusions and then mix for a final minute on slow speed. Bake at 180 degrees (160 degrees in fan assisted ovens) giving 55 - 60 minutes for an 800g gateaux, 45 - 55 minutes for a 400g loaf cake and 35 - 40 minutes for a 120g muffin.
