Bakels Yeast Doughnut Concentrate is a powdered concentrate which produces tender doughnuts with a light texture and good volume. Bakels' special formulation also reduces fat absorption during frying for a lighter, less greasy end result.
To make, place 5kg of Bakels Yeast Doughnut Concentrate in a spiral mixer along with 10kg of wheat flour, 600g of yeast and 7.5kg of water. Mix for 3 minutes on slow speed then 7 minutes at fast speed. Remove and mould into 50g shapes then retard overnight or place in a chiller for 30 minutes. Prove for 25 minutes at 38 degrees and 80% humidity followed by a further 25 minutes of dry proving. Fry at 190 degrees for 75 - 90 seconds on each side.
