This ginger cake mix is a complete powdered cake mix containing candied stem ginger pieces in a subtly ginger flavoured base. Just add vegetable oil and water to create muffins, traybakes, round and loaf cakes with a deliciously moist crumb and warm taste.
To make, place 1kg of cake mix into a mixing bowl with the paddle attachment fitted. Add 390g of water and 280g of vegetable oil and mix for one minute on a slow speed. Scrape down then mix for two minutes on medium speed followed by another minute on slow speed. Bake at 180 degrees (160 degrees if fan assisted) for 40 - 50 minutes for cakes and 30 - 35 minutes for muffins.
