Lemon Sensation is a complete powdered cake mix containing lemon fruit pieces in a deliciously lemon flavoured base. Just add vegetable oil and water to create muffins, traybakes, round and loaf cakes with a deliciously moist crumb and pockets of real fruit juiciness. Both batter and baked products are freeze-thaw stable.
To make, place 1kg of Lemon Sensation cake mix into a mixing bowl with the paddle attachment fitted. Gradually add 350g of water and 270g of vegetable oil over one minute on a slow speed. Scrape down then mix for two minutes on medium speed followed by another minute on slow speed. Bake at 180 degrees (160 degrees if fan assisted) for 40 - 50 minutes for cakes and 30 - 35 minutes for muffins.
