These festive coconut snowman cupcakes are simple to make and fun to decorate, not to mention absolutely delicious!
Add all cake ingredients to a mixing bowl, fitted with a beater.
Mix for 2 minutes on low speed.
Mix for 6 minutes on medium speed.
Scale at 40g into white cupcake cases.
Bake at 170°C for 35 minutes.
1.600kg British Bakels white fudgice
0.020kg British Bakels rich chocolate fudgice
0.020kg British Bakels Kokomix (coconut mix)
Orange jelly diamond
Pipe a swirl of white Fudgice.
Sprinkle Kokomix on top and add two smarties for buttons.
Place a large marshmallow on top of the body, adding half an orange jelly diamond for the nose.
Add a chocolate matchstick, cut in half, for the arms.
Pipe a face onto the marshmallow using warmed rich chocolate Fudgice.
