There's nothing quite as comforting as a classic mince pie during the Christmas season, but at BFP, we wanted to put a fresh spin on this tradition. Last week, our Business Development Manager, Andy C and Marketing Executive Demi, headed over to the team at Macphie to experiment with a reimagined version of the traditional mince pie. Inspired by current online baking trends and the growing popularity of indulgent hybrid desserts, we swapped the traditional fillings for a rich, fudgy brownie mixture making the Snowfall Brownie Pie.
Featuring a smooth, fudge brownie centre and finished with a shortbread snowflake cut-out, dusted with sweet snow for a festive touch. These Snowfall Brownie pies are a fabulous addition to your café counters and are also so simple to prepare with just a handful of ingredients to make yourself. A modern twist on a seasonal favourite, they offer your customers something familiar yet delightfully unexpected.

- MAC00025 | Macphie | Shortbread Mix | 500g

- Any Pidy Sized Pastry Tart Case you like!
- PUR000123 | Belcolade Belgian Dark Chocolate | 100g MELTED
- Melted Salted Butter | 130g
- Soft Salted Butter | 200g
- Water | 290g
Method:
- Pre bake oven at 160 degrees and 3 Fan.
- Make the Shortbread Dough by adding soft butter to the mix and beating until a dough is formed.
- Once the mix comes together, place onto a surface and roll out to desired thickness.
- Cut out to desired shape and leave in the freezer until later.
- Mix the butter and Dark chocolate together then add to the Brownie Mix with the water and beat for 6 minutes on medium speed, scraping the sides to ensure all mixed through.
- Place into a pre baked Pidy Tart Case.
- Get the pre cut shortbread out the freezer and place on top of the brownie mix.
- Place in the oven for 10-14 minutes depending on if want a gooey end result.
- Once baked, dust with Sweet Snow and serve.
- Enjoy!
