The Hummingbird Cake
A Hummingbird cake is a true classic, ultra-moist Southern spice cake featuring mashed bananas, crushed pineapple, and pecans, usually topped with cream cheese frosting however we have used the amazing Vanilla frosting from Macphie. It is a dense, oil-based cake packed with fruit, often including cinnamon, and uses vegetable oil rather than butter for superior moisture.
Ingredients
- 1000g Macphie Mississippi Muffin & Cake Mix
- Macphie Vanilla Frosting
- 235g vegetable oil
- 425g water
- 12g bicarbonate of soda
- 8g mixed spice
- 4g ground cinnamon
- 300g banana (mashed)
- 150g pineapple (drained)
- Banana chips
- Pecan nuts

Method Makes 1 cake
Mix the Macphie Mississippi Muffin & Cake Mix water & vegetable oil together and beat for 6 minutes on a medium speed.
Divide batter into two 8” deep cake tins.
Bake at 180°C for 45-50 minutes.
Allow to cool then divide each cake into three layers and sandwich with Macphie Vanilla Frosting with added ground cinnamon.
