What you will need.
Directions
Place Macphie Choutex in a bowl fitted with a paddle, add all the cold water and beat on slow speed for 2 minutes, scrape down and beat for a further 6-7 minutes on middle speed until a pipeable consistency is obtained
Pipe eclairs onto a lightly greased baking tray, Bake for 30-40 minutes at 220⁰c
Once cooled use a choux filling nozzle to fill the éclair with the fantastic ready to use Mallow from Renshaw.

FINISH
- Coat in Souplesse Milk Chocolate Compound from Dawn Foods. (But feel free to try all the other great flavours in this range).
- Top with your favourite inclusions. We have suggested pink and white marshmallows and Chocolate Curls.
